The Problem

Our mission is to connect children and our larger community directly to the origins of their food and to inspire them to make healthy and responsible food choices. For high school students, we want to leave them with a sense of empowerment – what are behaviors they can change at home that would make a difference for our environment? We want them to think about eating a variety of colors, types and parts of the plant to optimize nutrition and reduce food waste.

Our Plan

The students visiting the garden this week are in high school, so we want to test out our new Rainbow Ribbon Salad curriculum! This portion of the lesson will teach the value of “eating the rainbow” to get a variety of vitamins and nutrients in one’s diet. Our elevated curriculum will show older kids how to make healthier options in their everyday food choices. Specifically, they will be incorporating different plant parts on a home-made pizza as well as using all the colors of the rainbow to craft this delicious salad.
