The Problem
In our school community, students and families often lack consistent access to fresh, nutrient-dense greens year-round, especially during colder months. At the same time, students have limited opportunities to engage in hands-on, real-world learning that combines science, entrepreneurship, and sustainability. This gap results in missed chances to build critical life skills such as problem-solving, digital literacy, and environmental stewardship. Abundant Harvest addresses these problems by empowering students to grow microgreens indoors year-round while simulating a small business. The project teaches sustainable agriculture, promotes healthy eating, and develops entrepreneurial skills, all within a model that connects school learning to community well-being.
Our Plan
Our students will launch a year-round, classroom-based microgreens business simulation called Abundant Harvest. The project will be fully student-led, giving middle school Life Science students the opportunity to grow a variety of microgreens indoors using trays, grow lights, and seed mats. Students will: Grow and maintain microgreens indoors, learning about plant biology and sustainability. Create and manage digital order forms for mock ordering by families and staff. Design digital advertisements and marketing campaigns to promote their microgreens. Develop a digital recipe book showcasing ways to use microgreens in healthy meals. Facilitate a donation-based model by encouraging families to donate to support continued growth of the project. Though sales will not be conducted due to restrictions, this real-world simulation will immerse students in entrepreneurship, sustainable agriculture, and community outreach—all while promoting environmental responsibility and innovation.
